Macphie Soft Icing Application Instructions

Macphie Soft Icing is suitable for enrobing, decorative piping, extending fondant and the making of royal icing. Macphie Soft Icing sets with a dry surface but remains soft and helps to prevent the icing from going brittle.

Method

  • For Enrobing:

    Place Macphie Soft Icing (1.000 kgs) in a bain-marie and warm gently to approximately 38ºC (100ºF).

    Add simple syrup (0.125-0.250 ls) and stir gently to prevent aerating the mix. When blended, the mixture may be beaten on slow speed to obtain the required consistency for piping.


  • For Piping:

    Place Macphie Soft Icing (1.000 kgs) in a bain-marie and warm gently to approximately 38ºC (100ºF).

    Add simple syrup (0.065 ls) and stir gently to prevent aerating the mix. When blended, the mixture may be beaten on slow speed to obtain the required consistency for piping.


  • For Extending Fondant:

    Place Andrew Fondant (12.500 kgs) and Macphie Soft Icing (1.500 kgs) in a bain-marie and warm gently to approximately 38ºC (100ºF).

    Add simple syrup (1.500-3.000 ls) and blend together.


  • For Royal Icing:

    Blend Macphie Soft Icing (1.000 kgs) and egg white (0.650 kgs) together.

    Gradually add Sucre Glace Pulver Icing Sugar and beat lightly until the desired consistency is obtained.
